With lot of coconut and pinch of sugar it will taste so good. It will have mild sweet taste and  goes well as side dish for rice. It will be available fresh during Pongal and we always cook this on the day of Pongal and offer to god.

Yellow pumpkin stir fry is simple and easy side dish which can be prepared quickly.

Ingredients

  • Pumpkin medium slice
  • Onions 1
  • Red chilli 4
  • Mustard 1/4 tsp
  • Urad dal 1/4 tsp
  • Curry leaves few
  • Oil 2 tsp
  • Salt as required
  • Grated coconut 2 tbsp
  • Sugar 1 tsp

Instructions

  1. Wash and cube the pumpkin
  2. Heat oil in pan and temper with mustard, urad dal, red chilli and curry leaves.
  3. Then add onions and saute.
  4. Then add the cubed pumpkin, salt and saute for 2 minutes.
  5. Sprinkle little water, close and cook till soft
  6. Add the grated coconut and sugar and mix till everything is combined
  7. Yellow pumpkin poriyal is ready

How to make Yellow Pumpkin Stir Fry with step by step pictures

Wash and cube the pumpkin. Heat oil in pan and temper with mustard, urad dal, red chilli and curry leaves.
