Casatiello Recipe | Tortano Recipe | Neapolitan Easter Bread | Savory Easter Bread recipe with step-by-step pictures and instructions. Casatiello or Tortano is traditional Neapolitan stuffed Easter bread baked in a ring shape with eggs on the top. Naples/Neapolitan is a city in Southern Italy. The ring shape denotes the crown and eggs on the top denotes the rebirth of Christ.

Traditionally they bake the bread for easter and take the leftover for a picnic on Pasquetta, Easter Monday. This is my version of Italian savory bread made with whole wheat flour and stuffed with eggs, cheese, and chicken. Usually, they use lard which is a semi-solid fat product obtained from a pig. I substituted it with butter.

I baked this in my air fryer for the first time and it came out good. The top was browning fast, so next time will cover it with foil after 15 minutes of baking. You can use any stuffing of your choice. I used my bundt pan to make the ring shape. You can simply shape it as a ring and bake it too.

I should thank Renu who made me bake bread after a long time. Basically with too many things going around, I find it lazy and time-consuming to bake bread. Should start baking regularly soon.

My partner for this month is Swati who is another amazing baker friend. You will be spoiled with too many choices when you visit her blog. I need to try Coconut macrons and spitzbuben cookies soon. I gave her Vinegar and walnuts. She gave me cheese and honey and I made this savory easter bread.

Casatiello or Tortano is traditional Neapolitan stuffed Easter bread baked in a ring shape with eggs on the top.

Ingredients

  • Wheat flour 2 cups
  • Yeast 2 tsp
  • Milk 1 1/4 cup
  • Honey 1 tbsp
  • Salt as required
  • Butter 1/4 cup
  • Egg 3
  • Stuffing
  • Boiled Eggs 2
  • Chicken 1 cup
  • Cheese cubes
  • Salt to sprinkle
  • Pepper powder to sprinkle

Instructions

  1. Take milk in a bowl and warm in microwave for 15 seconds. Milk should be warm and not too hot.
  2. Add honey and yeast to warm water.
  3. Mix it nicely and keep it aside for 15 minutes
  4. After 15 minutes yeast mixture should be frothy.
  5. Take wheat flour and salt in bowl.
  6. Add the frothy yeast mixture to it and knead.
  7. Then add butter to the dough.
  8. Knead nicely for 10-12 minutes till the dough is soft and pliable
  9. Cover and allow it to rise till it doubles in size. It will take between 1-2 hours depending on the climate
  10. Once it doubles punch the dough and knead for 1 minute.
  11. Then roll them as rectangular sheet. Reverse little dough to make cross.
  12. Place the hard boiled eggs, chicken on it.
  13. Then sprinkle cheese, salt and pepper powder.
  14. Roll them and bring the edges together to form ring shape and place in bundt pan.
  15. Place the eggs on the top and make cross with the dough.
  16. Allow it to proof for 20 minutes and brush it with milk.
  17. Pre heat the air fryer to 170°C for 3 minutes and place the pan and bake for 25-30 minutes till done.
  18. Savory Easter bread is ready. Cool it slightly, slice them and enjoy warm.

Notes

Proofing yeast is very important for breads. You can use 1 tsp of instant yeast instead of active dry yeast.

If the yeast is not active don't proceed further. There can be few reasons for yeast to be inactive. Yeast is very old and reaching expiry date. Quality of yeast is not good. If you add yeast to very hot water it will kill the yeast. Proofing of yeast is very important for any bread recipes.

Always allow the dough to double in size. Don't go by the timing as it will be different in different climatic conditions.

You can shape them as two small ring breads too instead of one.

Use any stuffing of your choice. Vegetarians can use paneer, mushroom, baby corn, bell peppers etc.

Air fryer bakes faster. It may take around 35-40 minutes in oven.

After 15-20 minutes, you can cover the top with foil to avoid too much browning.

How to make Casatiello with step by step pictures

Then add butter to the dough.

Knead nicely for 10-12 minutes till the dough is soft and pliable

Cover and allow it to rise till it doubles in size. It will take between 1-2 hours depending on the climate

Once it doubles punch the dough and knead for 1 minute.

Place the eggs on the top and make a cross with the dough. Allow it to proof for 20 minutes and brush it with milk.

Preheat the air fryer to 170°C for 3 minutes and place the pan and bake for 25-30 minutes till done.

Savory Easter bread is ready. Cool it slightly, slice them, and enjoy warm.

  • I had no idea that one can bake a bread in an air fryer. Love your savory Easter Bread Narmadha and like how like the traditional ones you've baked it with the eggs on top. I would definitely replace the chicken with a veggie option.
  • Thanks for the mention Narmadha, so glad that you baked such good savoury bread. Interesting recipe with chicken and egg stuffing in it. I wanted to bake bread with an egg on top but was not sure. After seeing your recipe and bread, I think I should give it a try. The bread looks delicious.
