Carrot Halwa Recipe | Gajar Ka Halwa Recipe | How to make Carrot Halwa recipe with step by step pictures and instructions. Carrot Halwa is one of the popular Indian dessert made using grated carrot and milk. It is popularly known as Gajar Halwa or Gajar ka halwa in North India. It is simple and easy dessert which can be prepared even by beginners. I followed the traditional method of using milk and carrot for preparing carrot halwa. You can use condensed milk or khoya to make to more rich and cut short the cooking time.
Carrot Halwa with Ice cream is one the best combo and one should never miss it. You can serve carrot halwa hot or chill. It keeps well for 3-4 days in fridge. You can make this well ahead for any festivals or occasions. Grating carrot is the only tiring work. Otherwise you can prepare in under 30 minutes. Carrot Halwa Recipe | Gajar Ka Halwa Recipe | How to make Carrot Halwa
Ingredients
- Grated carrot 2 ½ cup tightly packed
- Milk 2 ½ cup
- Sugar ½ cup + 1 tbsp
- Ghee 1-2 tbsp
- Cashews 2-3 tbsp finely chopped
- Cardamom powder 1 tsp
Instructions
- Heat ghee in a kadai.
- Add chopped cashews to it and fry it till golden.
- Remove it in a plate and keep it aside.
- Add the grated carrot in the same kadai and saute for 3-4 minutes.
- Then add the milk to carrot.
- Allow the carrots to cook in milk and reduce. Keep stirring in intervals.
- Once the milk is reduced and carrots are cooked, add the sugar and cook till it all moisture evaporates.
- Finally add roasted cashews and cardamom powder.
- Switch off the flame and mix.
- Serve Gajar ka halwa hot or chilled with ice cream
