Handvo Recipe | Gujarati Handvo Recipe | How to make handvo recipe with step by step pictures and instructions. Handvo is mixed lentil savory steam cake which is very popular in Gujarat. Rice, dal and vegetables like bottle gourd, carrot, beans, peas etc are used to prepare handvo. Rice and dal is soaked and grind to form batter. Then it is allowed to ferment for 8 hours or overnight. I also saw some recipes using eno or baking soda and skip the fermentation process.
It is so healthy and nutritious breakfast or snacks. Serve it with Green Chutney. I felt this is quite similar to south Indian adai which also uses rice and lentils. Handvo can be steamed or baked in oven. I steamed handvo in pan. Bottle gourd is key vegetable used in handvo. We can use any vegetables of our choice. I adapted the recipe from here and made some few changes. We can adjust the proportion of dal according to our preference.

Ingredients
- Rice ½ cup
- Chana dal ¼ cup
- Toor dal 2 tbsp
- Urad dal 1 tbsp
- Curd ¼ cup
- Baking soda ¼ tsp
- Bottle gourd grated ½ cup
- Carrot grated ½ cup
- Turmeric powder ¼ tsp
- Red chilli powder ⅓ tsp
- Oil 2 tsp
- Ginger garlic paste 1 tsp
- Green chillies 1 big finely chopped
- Lime juice 1 tsp
- Salt as required
To Temper
- Oil 2 tsp
- Mustard ¼ tsp
- Cumin seeds ¼ tsp
- Sesame seeds ½ tsp
- Curry leaves few
- Hing ⅛ tsp
Instructions
- Soak rice, chana dal, toor dal and urad dal for 4-5 hours.
- Wash and transfer the mixture to mixer.
- Add ½ tsp salt and grind to smooth batter adding very little water. Batter should be thick
- Transfer to vessel, close and allow it to ferment for 8 hours or overnight.
- Mixture will not ferment like idly batter after 8 hours. It will ferment little.
- Add curd to the batter
- Then add grated bottle gourd, carrot, peas, green chillies, ginger garlic paste, oil, salt, baking soda, red chilli powder and turmeric powder.
- Finally add lime juice to the batter and mix.
- Heat pan and add 2 tsp oil
- Temper with mustard and cumin seeds.
- Once it browns add sesame seeds, curry leaves and Hing
- Then add 2-3 spoons of batter and spread a little like uttampam.
- Close the lid and cook for 3-4 minutes.
- Then carefully flip the handvo.
- Cook for another 2-3 minutes till it is done.
- Gujarati handvo is ready. Serve it with green chutney.

How to make Gujarati Handvo with step by step pictures
