Kambu Cookies Recipe | Pearl Millet Cookies | Bajra Cookies recipe with step by step pictures and instructions. Learn how to make healthy and nutritious cookies using pearl millet. Pearl millet is also called as kambu in tamil and Bajra in hindi. Pearl millet has a lot of health benefits and nowadays many are moving to millet diet skipping rice. It is one of the easy and healthy snack option for kids. This recipe is adapted from basic whole wheat cookies.
I wanted to make biscuits using millets. I used to try different cookies in UK. After coming to Chennai I am bit lazy to make as my oven is small and I need to bake in 3 to 4 batches for one cup of flour. Finally made these cookies and they were tasty and crunchy. I have used jaggery as sweetener for these cookies. I used my homemade Bajra flour which was little coarse to make these cookies. You can use fine flour to make these biscuits.

Ingredients
- kambu flour 1 cup
- Jaggery 1/2 cup
- Butter 60 grams
- Baking powder 1/2 tsp optional
- Cardamom powder 1 tsp
- salt a pinch
- Water 1 tbsp
Instructions
- Take Jaggery in kadai
- Take 1 tbsp of water and allow it to melt
- Once it is fully melted, switch off the flame and allow it to cool down.
- Filter to remove impurities and keep it aside.
- Take butter in bowl and add jaggery
- Whisk together to form creamy mixture
- Now add baking powder, cardamom powder, salt, and kambu flour
- Mix everything together to form smooth dough.
- Dough will be little sticky. Shape the dough as log and wrap it in cover and keep in fridge for 1 hour.
- After one hour, take the firm dough and cut them as slices.
- Place the cookies in baking tray lined with parchment paper.
- Preheat the oven at 180°C and bake in the same temperature for 20-22 minutes till it is done.
- Serve the cookies with hot cup of Tea/Coffee
Notes
You can use organic powdered jaggery directly without melting. Since I used normal one, I melted and filtered to remove impurities
Baking time will differ depending on oven as well as thickness of cookies. So always keep an eye after 15 minutes
Cookies always looks soft while taking out and later becomes firm
If the mixture is too dry add few tablespoon of water to make the dough. If it is too sticky can add one tbsp of flour extra while making dough.
How to make Kambu Cookies with step by step pictures
Take Jaggery in kadai
