Minnie Mouse Cake Recipe | Minnie Mouse Cake with buttercream frosting | Kids Birthday Cake recipe with step-by-step pictures and instructions. Learn how to make Minnie Mouse Cake for kids' birthday party. The base of the cake is whole wheat chocolate cake sweetened with brown sugar and frosted with American Buttercream Frosting.

This is a long pending post and finally making it to the blog. I made this for my second daughter's birthday last August. I always plan ahead for kids' birthdays and decide what cake to make and start searching for designs, ideas from the internet. My kids demanded Mickey mouse or Minnie mouse cake. After a lot of research, finally decided to go with a simple Minnie mouse cake without fondants.

I made a big cake and cut it in the shape of a Minnie mouse. Due to lockdown, could not get the correct colors for the cake. Everything was out of stock and no online delivery at that time. So managed with colors I had in hand. It indeed turned out good with shape and taste.  Check out other varieties I made in my birthday party platter.

    Chocolate Sponge

    • Whole wheat flour 3 cups
    • Cocoa powder ¼ cup

    • Icing sugar 600 grams
    • Vanilla essence 1 tbsp
    • Milk 1-2 tbsp
    • Colors as you prefer for decorating

    Instructions

    Making Chocolate Sponge Cake

    • Take wheat flour, cocoa powder, baking powder, and baking soda in a sieve
    • Sieve them 6-7 times and keep them ready.
    • Take milk in a bowl and add vinegar.
    • Mix it nicely and keep it aside for 5 minutes.
    • In the frothy milk add sugar, oil, and vanilla essence and mix it nicely till sugar is dissolved.
    • Add flour in batches and mix
    • Mix nicely without lumps till everything is combined
    • Pour the batter into a greased tin lined with parchment paper.
    • Heat Kadai and place plate with holes in it, close the lid, and preheat for 5 minutes.
    • Then place the cake tin in the Kadai.
    • Close it with lid and bake in low flame for 50-55 minutes till toothpick inserted comes out clean.
    • Allow the cake to cool down completely
    • Cool them in a wire rack. You can prepare ahead and wrap them and keep them outside.

    Buttercream Frosting

    • Take butter in a bowl.
    • Beat them till smooth and creamy for 4-5 minutes.
    • Then add the icing sugar in batches and beat it continuously still smooth
    • Next, add vanilla essence to it and beat till it forms stiff peaks
    • If the frosting is too thick, you can add little milk to adjust consistency.
    • American buttercream frosting is ready
    • Add gel colors of your choice to buttercream and keep it ready.

    Assembling the cake

    • Take a color print out of the Minnie mouse picture and cut it
    • Place the picture on top of the cake and insert a toothpick on the corners to trace it.
    • Prick it with the toothpick to trace the picture on the cake and mark it.
    • Carefully remove the excess to form the shape.
    • Crumb coat the cake with buttercream on the sides. Mark the shape of the bow and face. With the help of buttercream, pipe the outer shape of bow and face.
    • Then pipe the entire cake with different colors.
    • I used yellow, red, black, and white colors to decorate the cake.
    • Minnie Mouse cake is ready.

    Notes

You can use any cake recipe as base.
You can use whipped cream frosting instead of buttercream frosting.
If you are baking in oven, preheat the oven to 180°C for ten minutes and bake in the same temperature for 45-50 minutes till toothpick inserted comes out clean.
If the buttercream frosting is too thick, you can add few drops of milk to adjust the consistency.
Print of the picture helped me to get the exact shape. If you are good at drawing you can draw yourself too.
According to the size of the tin, choose the picture size.= or vice versa.
I find this method easier than making two cake and then joining.
If you want you can cut the cake and apply cream in the layers.
In our home, plain cakes are preferred than cream cakes. So I just used cream only for decoration and skipped for layers.
