I always love to shallow fry the baby corn and add to rice. You can simply add the boiled baby corn and make fried rice too. Always use big wok and saute in high flame to get the taste of restaurant style fried rice. You can skip the sauces and make it simple too. Enjoy them with Manchurian or any gravy of your choice. How to make Baby Corn Fried Rice with step by step pictures
Soak 1/2 cup basmati rice for 15 mins. Boil 1.5 cup water in a pan. Once it boils add rice to it. Cook for 5-7 minutes till it is just done.
Drain the water and allow it to cool down
Slice the baby corn. Boil them in water for 2-3 minutes
Drain the water and add red chilli powder, ginger garlic paste, salt.
Marinate and keep it aside.
Heat 0.5 tbsp oil and shallow fry the baby corn and remove them.
Add remaining oil and add finely chopped garlic in the pan.
Once it browns add onions and finely chopped vegetables.
Saute in high flame for 1-2 minutes and then add shallow fried baby corn.
Saute and then add salt, pepper powder, soya sauce and vinegar.
Finally add the cooked rice and saute in high flame.
Then add sugar and mix.
Fried rice is ready
Serve it hot with Gobi Manchurian or any side dish of your choice.
