Besan karasev is crispy and crunchy snack which can be prepared within 30 minutes. It uses minimal ingredients which you can get easily. Since kids and everyone is in home now, they demand snacks often. You can stock these up and they can enjoy as and when they want. You can make it plain or flavor them with garlic, crushed pepper, cumin or ajwain.

This is one of the savory made during Diwali and there are lot of variations and I use only besan flour to make sev. Monday again and theme for this week in Foodie Monday Bloghop group is #244SnackMania suggested by Renu who blogs at cookwithrenu. She suggested snacks which can be stored for long time keeping the current situation of everyone working from home in mind. Check out some amazing recipes with simple ingredients like Chocolate Cake without cocoa powder or Herb roasted peanuts from her blog. My contribution to cupboard snacks is Karasev.

  • Ajwain 1.5 tsp
  • Pepper powder 1/2 tsp
  • Red chilli powder 1 tsp
  • Hot oil 1/4 cup
  • Turmeric powder 1/2 tsp
  • Hing 1/4 tsp
  • Salt as required
  • Water as required

Instructions

  1. Sieve the besan flour once and take in a bowl
  2. Add salt, hing, lajwain, pepper powder, red chilli powder and turmeric powder to it and mix.
  3. Add hot oil to it and mix it so it resembles crumbs.
  4. Now add water little by little and knead to smooth dough.
  5. Dough should be smooth and soft and not too stiff.
  6. Take murukku press and use plate with holes. Grease it with oil and load the dough.
  7. Press it directly in hot oil in circle form without overlapping each other.
  8. Flip and cook in medium flame till bubbles subsides.
  9. Drain in kitchen tissue. Repeat the same for rest of the dough.
  10. Karasev is ready

Notes

If the dough is difficult to press, then it is too stiff and you can add few drops of water and knead to smooth dough. Don't add too much water too as it will absorb more oil

I used less spices for kids, you can add more pepper powder or chilli powder.

You can use butter instead of oil
