    Kalmi Vada Recipe | Rajasthani Kalmi Vada Recipe | How to make Kalmi Vada recipe with step by step pictures and instructions. Kalmi vada is deep fried fritters from Rajasthan. Perfect for evening snacks with cup of hot Tea/Coffee. It is prepared with coarsely blended chana dal and spices. It is very similar to south Indian masala vada with slight difference in spices used. We add crushed coriander seeds which gives different flavor to these vada. 

    I saw many recipes where they just prepare the batter and fry the vada once. There are few recipes which said they always fry these vada twice. I followed the recipe of  tarladalal and adjusted according to my taste and fried them twice. Always grind chana dal coarsely so we will have crunchy texture. It was hit with my kids and got over so soon. Serve them with green chutney.

    Kalmi Vada Recipe | Rajasthani Kalmi Vadai Recipe | How to make Kalmi Vada

    Kalmi vada is deep fried fritters from Rajasthan.
    Prep Time 10 minutes minutes
    Cook Time 20 minutes minutes
    Total Time 30 minutes minutes
    Servings 15 - 20 pieces

    Ingredients

    • Chana dal 1 cup
    • Green chilli 1 big
    • Ginger 1 tsp finely chopped
    • Red chilli powder ½ tsp
    • Coriander seeds 1 tbsp
    • Fennel seeds 2 tsp
    • Coriander leaves 2 tbsp finely chopped
    • Salt as required
    • Onions 1 small finely chopped

    Instructions

    • Wash and soak chana dal for 3 hours.
    • Drain the water and keep it ready
    • Dry roast coriander seeds in a pan.
    • After roasting crush them in mortle
    • Take ginger and green chillies in mixer.
    • Grind them coarsely
    • Then add chana dal and salt.
    • Grind it coarsely sprinkling few drops of water.
    • Transfer the batter to bowl.
    • Add finely chopped onions, crushed coriander seeds, fennel red chilli powder and finely chopped coriander leaves.
    • Mix and keep the batter ready.
    • Heat oil in a pan
    • Take one ball size and cook then till light golden.
    • Now slice them lengthwise and deep fry again till golden.
    • Kalmi vada is ready.
    • Serve it with hot cup of Tea/Coffee

    How to make kalmi vada with step by step pictures

    Wash and soak chana dal for 3 hours. Drain the water and keep it ready

    Dry roast coriander seeds in a pan.

    After roasting crush them in mortle

    Take ginger and green chillies in mixer.

    Grind them coarsely

    Then add chana dal and salt.

    Grind it coarsely sprinkling few drops of water.

    Transfer the batter to bowl.

    Add finely chopped onions, crushed coriander seeds, fennel red chilli powder and finely chopped coriander leaves.

    Mix and keep the batter ready.

    Take one ball size and flatten them like big vadai

    Heat oil in a pan. Take one ball size and cook then till light golden.

    Now slice them lengthwise and deep fry again till golden.

    Kalmi vada is ready.

    Serve it with hot cup of Tea/Coffee
