Chocolate Cake Recipe | Chocolate Pastry | Chocolate Sponge cake recipe with step by step pictures and instructions. Learn how to make moist, soft and sponge chocolate cake. Chocolate Sponge Cake is one of the most loved cake by everyone and perfect for any occasion or celebration. Being a fan of chocolate I always end up making chocolate cake. I have tried many recipes and this recipe is surely a keeper and can be used as base for any cake. One of the best chocolate sponge cake recipe which never let me down.

This recipe uses eggs which gives amazing texture to the cake. If you are looking for cakes without eggs check my collection of eggless bakes. You can decorate the cake as per your choice or simply enjoy them without frosting. I have used whipped cream frosting for decorating the cake and used chocolate and sprinkles on the top. You can use buttercream frosting or Chocolate Ganache. Suprise your siblings by making this yummy and soft chocolate sponge cake for Raksha Bandhan. Dedicating this post to my brother Divagaran who is always there to support me in whatever I do. Also victim of many of my kitchen experiments.

Ingredients

    Chocolate Sponge
  • Maida/All purpose flour 1/2 cup
  • Cocoa powder 1/4 cup
  • Baking soda 1 tsp
  • Egg 4
  • Sugar 2/3 cup
  • Vanilla essence 2 tsp
  • Oil 2 tbsp
  • Sugar Syrup
  • Water 1/2 cup
  • Sugar 1-2 tbsp
  • Frosting
  • Whipping Cream as required
  • Chocolate sauce/ Butterscotch sauce as required
  • Chocolate chips/sprinkles/grated chocolate for topping

Instructions

  1. Sieve Maida, cocoa powder, baking soda in a 2-3 times and keep it aside.
  2. Take eggs in a bowl
  3. Add sugar and beat it nicely till fluffy and bubbly.
  4. Add oil and vanilla essence and beat it.
  5. Slowly add the flour mixture and beat it till it is combined nicely.
  6. Grease the mini loaf baking pan with butter and dust with flour.
  7. Pour the prepared mixture to the pan and tap it 2-3 times to release air.
  8. You can preheat the oven to 160°C for ten mins while you are preparing the batter.
  9. Bake in same temperature for 30-35 minutes till toothpick inserted in center comes out clean.
  10. Cool them in wire rack
  11. Cut them into three layers
  12. Prepare sugar syrup by mixing water and sugar
  13. Prepare Whipping Cream as per the instructions and keep it ready
  14. Place some parchment paper and place a layer of cake on the top
  15. Sprinkle some sugar syrup on the cake
  16. Apply layer of whipping cream on the top
  17. Place the next layer of cake and sprinkle sugar syrup
  18. Apply layer of whipping cream on the top
  19. Then place the final layer of cake
  20. Apply the remaining whipping cream on the top and cover the sides
  21. Drizzle some chocolate or butterscotch sauce on the top
  22. Apply some grated chocolate on the sides
  23. Top it with chocolate chips, sprinkles, nuts or anything of your choice.

Notes

Use chocolate ganache or buttercream frosting for decorating. You can leave it plain also.

Sugar syrup will help to keep the cake moist.
