Kudo Millet Sambar Sadam Recipe | Varagu Sambar Sadam recipe with step-by-step pictures and instructions. Kudo millet sambar sadam is a delicious and healthy one-pot meal made with millet, dal, and spices. It is a good alternative to sambar sadam made with rice. I used Varagu/Kudo millet but you can substitute with any millets.
I made it in the usual way of making sambar sadam but substituted it with millets. It is an easy one-pot recipe that gets ready in 30 minutes. I always use an equal amount of rice and dal for this recipe and it yields the best results. This is mild spicy perfect for kids. You can add any vegetables of your choice and serve them along with chips or appalam.

Kudo Millet Sambar Rice Recipe | Varagu Sambar Sadam
Ingredients
- Millet ½ cup
- Toor dal ½ cup
- Sambar powder 2 tsp
- ghee 1-2 tbsp
- oil 2 tsp
- Onions 1
- Tomatoes 1 big
- Carrot 1
- Beans ½ cup
- Brinjal ½ cup
- Tamarind extract 3 tbsp
- Turmeric powder ½ tsp
- Sambar powder 2 tsp
- Mustard ½ tsp
- Urad dal ½ tsp
- Curry leaves few
- Hing ¼ tsp
Instructions
- Wash and soak millet and toor dal for 1-2 hours.
- Drain the water and keep it ready.
- Heat oil and temper with mustard, urad dal, Hing and curry leaves.
- Once it browns add the finely chopped onions and saute for one minute.
- Then add tomatoes and saute till mushy
- Now add the chopped vegetables and saute for few minutes till it shrinks.
- Now add salt, turmeric powder and sambar powder.
- Then add water and tamarind extract.
- Once it boils, add millets and dal. Check the seasoning.
- Close the cooker and pressure cook for one whistle and then in low flame for 15 minutes and switch off.
- Once pressure releases open the cooker and mix. Drizzle ghee on on the top.
- Sambar sadam is ready.
- Serve hot with chips, appalam or potato fry.
