Luchi Recipe | Bengali Luchi Recipe | How to make Luchi recipe with step by step pictures and instructions. Luchi is deep fried Indian flat bread made with maida. It is similar to Poori but made with all purpose flour. It is so soft and fluffy and one of the traditional recipes from Bengal. They make it for any festivals and pairs well with Alur Dom. Traditionally they fry luchi in ghee but I used normal refined oil to fry them.
Preparation and method is similar to making poori where we knead the dough adding little ghee/oil. Enjoy them with any subzi of your choice and they stay so soft for long time. Perfect to pack for lunch box for kids. We are starting September Mega BM from today and we have the interesting theme of thali lined up. First week I am doing breakfast from different states. Ingredients
- Maids/All purpose flour 3 cups
- Oil/ghee 1 tbsp
- Salt 1 tsp
- Water as required
Instructions
- Take Maida in a bowl and add salt, ghee/oil to it.
- Mix it with your hands and then add water.
- Slowly add water and knead it to smooth dough.
- Keep it covered with cloth till we roll them.
- Take small balls of the dough.
- Roll them into round discs with medium thickness.
- Heat oil in pan and when it is hot drop the poori.
- Press it with spoon on the sides so it puffs up.
- Turn and cook for few seconds and remove them.
- Hot Luchi is ready. Serve them with any gravy of your choice.
Notes
Oil should be hot for luchi to puff up. Once it puff up maintain the same flame.
Roll the luchi neither too thin or too thick.
Using ghee makes it extra soft and if you like you can fry in ghee.
