Puran Poli Recipe | Sweet Poli Recipe | Paruppu Poli Recipe with step by step pictures and instructions. Puran Poli is stuffed flat bread made with all purpose flour. There are different variations of stuffing used. Traditionally it is sweet recipe where chana dal/coconut is used for stuffing but we do have savory versions. Popularly known as upputu, it is made during many festivals/occasions. It is one of the my favorite sweets and I always help my mom while preparing during childhood.
I have used versatile chana dal stuffing which is used for kozhukattai or suviyam. Process of preparing looks to be lengthy but with proper planning we can make it easily. I made the stuffing and also the dough for outer covering previous day and made next day early morning before my kids wake up. Key to soft poli is soft and elastic dough. Use Gingely oil while kneading and knead them till soft and elastic. Allow the dough to rest for 4-6 hours. Monday again and theme for this week in Foodie Monday Bloghop group is #218DiwaliDhamaka. Ingredients
- Maida 2 cups
- Salt 1/2 tsp
- Turmeric powder 3/4 tsp
- Gingely oil 6 tbsp
- Water as required
- Gingely oil/ghee for drizzling
- Chana dal 2 cups
- Powdered jaggery 2 cups
- Cardamom powder 2 tsp
- Coconut 1 medium
- Salt 1/4 tsp
Instructions
- Soak chana dal for 2-3 hours
- Add water to chana dal and pressure cook for 1 whistle.
- Drain the water and keep it aside till it is dry
- Take part of chana dal in mixer along with powdered jaggery
- Pulse it for 2-3 times till it is combined.
- Repeat the same for rest of the dal and transfer to bowl
- Grate the coconut and dry roast in pan till all moisture is absorbed.
- Add salt, cardamom powder to the mixture
- Then add grated coconut to mixture
- Combine everything and pooranam is ready.
- Take maida, turmeric powder and salt in a bowl
- Mix together and add 4 tbsp oil
- Mix nicely so it looks like crumbs
- Add water and knead to form dough
- Now add 2 tbsp oil and knead to soft and elastic dough.
- Apply oil and close and keep it aside for 2-6 hours or overnight in fridge.
- Make small balls of the stuffing
- Take lemon sized dough and flatten them slightly. Use banana leaves, parchment paper or plastic sheet to roll the dough.
- Place the stuffing on it.
- Bring the dough together and close it. Remove any excess dough.
- Apply little oil and flatten them with your hands.
- Heat dosa pan and carefully transfer the rolled dough to pan.
- Drizzle oil/ghee and cook both sides till golden
- Repeat the same for rest of the dough.
- Puran Poli is ready.
Notes
Use can use ghee/gingely oil while making.
Stuffing can be prepared ahead and kept in fridge.
I kneaded the dough and allowed to rest in fridge overnight and made next day morning.
Adjust the amount of coconut in stuffing according to your choice.
Dough should be soft and elastic. It will be little sticky. Apply oil while kneading.
You can use banana leaves or parchment paper while rolling or chapati roller to roll the poli.
I don't like more ghee flavor in Poli so used gingely oil while making. You can use Ghee.
How to make Poli with step by step pictures
