Choosing potatoes is very important to get crispy fries. Potatoes with high starch content are best for fries. If you are staying abroad, you can choose Russet potatoes or Maris piper potatoes. In India, you can choose potatoes with mud which has high starch content. Same potatoes will be good for chips too. Check out a lot of tips and tricks in the notes section.

French fries are a crispy and delicious snack made with potatoes.

Ingredients

  • Potato 500 grams or 6 medium
  • Oil 2-3 tsp
  • Salt as required.
  • Pepper powder 1 tsp

Instructions

  1. Peel the skin of potatoes and wash them.
  2. Then slice them as medium-sized fingers.
  3. Wash them 3-4 times to remove the starch of potatoes. The water should be clear now.
  4. Then soak the potatoes in ice water for 20 minutes. I added some ice cubes to the water.
  5. Add 1 tsp salt and boil the potatoes till half cooked for 3-4 minutes.
  6. Drain the water completely and spread it on kitchen tissue or towel
  7. Use another towel or tissue to absorb the water on the top.
  8. Take dried french fries in the bowl.
  9. Toss it with little oil.
  10. Preheat the air fryer at 190C for 3 minutes.
  11. Then place the french fries on the air fryer basket and air fry them for 15-18 minutes till they become crispy. Shake the basket mid way through.
  12. Then take the french fries in a bowl and season them with salt and pepper powder and mix.
  13. Yummy french fries are ready. Serve it with tomato sauce

Notes

You can trim both sides of the potatoes and cut them lengthwise to make perfect french fries.

You can deep fry the potatoes instead of air frying.

Don't overcrowd the air fryer basket. Shake the basket half way through for even browning.

Choose high starch potatoes for making french fries or chips

Make sure it is dried nicely before frying the potatoes

You can store the potatoes in zip lock cover in freezer and fry them as and when required.

Soaking in cold water helps to remove excess starch content.

Baking time may vary between different models. Check and adjust the timing accordingly

Season the potatoes with spices of your choice. I simply used pepper powder. you can use red chilli powder, onion powder, garlic powder, mayo etc.
